Abstract

Our goal is to recommend healthy, affordable produce options to put on the shelves of a new, local, non-profit grocery in a food desert. These recommendations should ensure the financial sustainability of the produce department. Data from the FDA, USDA, the US Census Bureau, and others are used to quantify ‘healthy’ and ‘affordable’ relative to other produce and the budget of the average consumer in West Bloomington.

This work is, in part, supported by the NexSTEM program.
